This rice is the perfect option if you are looking for something spicy to go with any dish. Whether it’s a roast or a curry this kicking spicy rice definitely switches up the flavours! Whatever your spice tolerance you can still make a version of this so it’s perfect for making when you have kids as you can just separate the rice before choosing which sauce to add!
Ingredients:
Oil
2 Cups of long grain rice
1 Medium onion
3 tbsp of Nando’s sauce – any spice level
1 Chicken stock cube or fresh chicken stock
Soya sauce
Salt
1/2 Tsp of turmeric
1 Lime
Chopped coriander (to garnish)
Method:
Cook 2 cups of Long grain white rice as normal.
Once cooked rinse it slightly under cold water so grains stay separated.
Leave it aside to drain.
In a pan heat little oil, add cubed onion (I used one medium sized) then add in cubed pepper.
Let that cook for few mins then add in 3 tbsp of any Nando’s sauce, 1 chicken stock, splash of soya sauce, salt & half tsp of turmeric powder.
Let that cook for further few mins then add your cooked rice.
Squeeze in one whole fresh lime juice (that’s the secret ingredient) then garnish with lots of chopped coriander.
