Recently I have discovered the brilliant MuslimMamaOnTheMove.com. The woman behind this blog is Lindsey Nicole. She is an American-Muslim convert of 14 years and a mother of two.

She is a Board-Certified Holistic Nutritionist and helps to simplify healthy living and healthy eating for busy Muslim mums. Not only that but she is also an E-Book author, artist and world traveller. Yes, we are talking about a very talented woman. What I love about her is her authentic, no nonsense approach to not only cooking but also to Islam and motherhood.
It was hard to choose a favourite recipe from her e-book because they are all delicious, straightforward and nutritious. The recipe I did choose is the Chicken Avocado Soup. It’s a really refreshing light soup that you must try. We had it with a side of salad and bread to dip into for iftar. The chicken, avocado combination was new to my family but they loved it.
CHICKEN AVOCADO SOUP
Ingredients:
1 cup bone broth
1 pound chicken thighs
2 Tbsp olive oil
1 cup green onion, finely chopped
1 tsp minced garlic
1 tomato, diced
1/8 tsp cumin
1 tsp salt
2 avocado, diced
1⁄2 cup cilantro, finely chopped
Lime wedges
Method:
Step 1: Heat olive oil & brown chicken on both sides. Add green onion and garlic and sauté for 2 minutes.
Step 2: Add diced tomatoes & sauté for a further minute until soft.
Step 3: Add broth, cumin, and salt. Bring to boil, cover, and simmer on low for 20 minutes.
Step 4: Remove chicken & shred.
Step 5: Layer in separate bowls: shredded chicken, avocado, green onion, & cilantro.
Step 6: Ladle broth into bowl & serve with lime wedge.
