This is a family favourite that I wanted to share with you all. Super easy and healthy. Please let me know what you think if you give this recipe a go.
Ingredients
1 kilo of chicken wings
Honey
Cherry tomatoes cut into half
Onions, thickly sliced into rings
Garnish:
Coriander
Turkish spice mix listed below:
1 tsp ground Surmac (tangy Turkish spice)
2 tbsp. of Bibir Salcasi (Turkish hot red pepper paste)
2 tsp red chilli flakes or pepper flakes called Urfa Bibir (I add both)
2 tbsp. natural or Greek yoghurt
2-4 tbsp. olive oil
2 tbsp. garlic
Half a tsp of cumin
1 tsp dried oregano
Salt/sea salt to taste, I would start with 1 tsp
Method
Mix thoroughly and marinade chicken with the spice mix overnight.
Preheat oven (180-200 fan oven) and take chicken wings out of fridge.
Slice 1-2 onions, thinly, and a handful of cherry tomatoes in half.
Put the chicken in a baking tray and cover the wings with onion rings and cherry tomatoes. Add 2 tsp of honey by dropping from a spoon in a zig zag movement so drops fall unevenly over the wings. Cover with foil and bake for 20-25 mins.
Take off foil, turn the wings over and mix up the now softened onions rings and tomatoes. Add another two tsp of honey, again dropping over to glaze.
Put back in oven with no foil for about 15 mins. Put heat lower if wings begin to blacken.
Turn over again for 5 mins so the other side crisps up. But avoid this if wings are looking overdone. Simply mix up wings.
Garnish once done with coriander.
