During the first lockdown I honestly don’t think I had baked so much in my whole life. Now that’s really saying something, as I have always been a keen cook and food lover. Somethings definitely changed since we have got used to being home more. Despite the lockdowns coming to an end I find myself just wanting comforting simple food. So now when I crave a dessert I go to easy, fast and minimum ingredient recipes. And no I don’t get the kids involved. That’s what we did in the first lockdown.
Now I just don’t have the mental mind set for the mess and the arguing. I just want to sit on my sofa with a delicious hot dessert and a coffee. These are two of my favourite fast and easy desserts.
Easy Hot Cross Bun Custard Dessert
The first one is this Hot Cross Bun dessert. I love these spicy buns but really you could use any sweet bun or Brioche bread. The cinnamon smell when they come out the oven is amazing. It’s really the next level of bread-and-butter pudding.
You will need:
1 Packet of 6 hot cross buns
2 Cartons of ready custard
3 Tbsp runny honey
Method:
- Pre heat oven to 180c fan oven.
- Slice the buns into thin slices.
- Pour custard into oven proof dish.
- Place the bun slices over the custard.
- Place in the oven for 15 mins until golden.
- Take out of the oven, drizzle with honey and enjoy
Cheat Baklawa
Crispy hot baklawa is truly heavenly and this cheat recipe is super easy.
You will need:
1 packet ready rolled puff pastry
1 carton of ready made custard
3 tbsp runny honey
Crushed pistachios (optional)
Method:
- Pre heat oven to 180c fan oven.
- Open the puff pastry on a flat surface and roll out a little, with a rolling pin, to make the pastry a little thinner. Then cut into two equal squares. Place one square onto a lined baking dish. Prick all over with a fork and bake for 10 minutes. Take out of the oven and leave it to cool for 5 minutes.
- Once cool, pour the custard over the cooked pastry.
- Top with the second square of pastry and cut any shape you like, squares or diamonds. You could just cut squares and fold them over, do any shape you like.
- Bake in the oven for 15 minutes or until golden.
- Drizzle with honey while hot.
- Sprinkle over crushed pistachios and enjoy
